Aggressive Control Measures for a Wily Pathogen: Salmonella in Low-Moisture Products

Aggressive Control Measures for a Wily Pathogen:
Salmonella in Low-Moisture Foods

Wednesday, April 25, 2012
1:00 to 4:00 pm (EDT)

Preventive strategies that minimize opportunities for contamination by Salmonella in ready-to-eat products are essential for all food manufacturers, and GMA has designed a webinar that will provide industry expertise focused on the identification of risk factors associated with Salmonella contamination.

Facilitated by subject matter experts from GMA and its member companies, the Aggressive Control Measures for a Wily Pathogen: Salmonella in Low-Moisture Foods webinar will identify common industry preventive control measures through practical approaches involving critical elements for Salmonella control.

These insights from industry veterans can be put to use immediately and will include in-depth analyses of process validation, moisture control, and environmental monitoring as a verification tool for Salmonella control.

Attendees will gain the necessary tools to design an environmental monitoring program (EMP) to detect potential changes in sanitary conditions in the processing environment, as well as learn actions that can be taken to assure sanitary conditions are maintained, the need to conduct extensive investigative sampling when a potential harborage is identified, and when to escalate sampling/environmental analysis and potentially finished product sampling.
