Codex Committee on Food Hygiene

The Codex Committee on Food Hygiene (CCFH) develops basic provision on food hygiene that are applicable to all food, to endorse provisions on hygiene that have been prepared and referred from the commodity committees, to draft provisions on hygiene applicable to specific food items or food groups, to consider microbiological risk management matters in relation to food hygiene, food irradiation and in relation to the risk assessment of the FAO/WHO Joint Expert Committee on Microbiological Risk Assessment.  CCFH is hosted by the United States.
